I’ve been reading a lot about chia seeds, and how they are beneficial to your health. Once I came across this recipe on Tumblr, I caved and bought all of the ingredients the next day at the local farmer’s market.
The verdict? Well, if you soak the seeds it is NOTHING like tapioca, despite what the Internet tells you. It is more like eating the slimy seeds inside of a tomato and pretending like you don’t hate it. (I am totally squicked out the by the texture of tomato seeds!)
However, they were pretty tasteless and the nutritional boost they provide was pretty intriguing. I had a serving of this for breakfast and again after a workout. Was still hungry at lunchtime, but felt very satisfied after spin.
Another aside: I might be allergic to these? I’ve eaten everything else that goes into this recipe on the regs and never had a reaction, but I broke out into a rash on my legs after having two servings. I’m hoping it is stress and not the chia seeds, but we will see. (via Mango Coconut Chia Pudding | Skinnytaste)
